Mail that I have sent is not displayed, even though I have selected the option to keep sent emails in setup.

As well as setting the emails to be kept, you also need to make sure they are being displayed. Go to the Mail section in ZIMACS, select the View menu and in the Kept Mail section, ensure that the Show option has a tick beside it as illustrated below. If it does not, click the Show option.
